This unusual Sun-Dried Tomato & Chipotle Pesto combines cilantro and basil, almonds and parmesan for a condiment that is at once herbal, spicy, and zingy. Try it in a quesadilla for a quick and easy meal you just might get hooked on.

We added some of the sun-dried tomato oil to the pesto. You can also drizzle the oil over steamed veggies or use it to dip bread into.

Instructions

Pulse cilantro, basil, onion, Parmesan, almonds, lime juice, sun-dried tomatoes and oil, chipotles, adobo sauce, and garlic in a food processor until chunky. With machine running, drizzle in olive oil; process until smooth. Season pesto with salt and pepper.
