Three Onion Ragu with Cherry Peppers
Marmalade-like, this onion medley resembles a sweet-and-sour Italian flavor called agrodolce.
Instructions
Sweat onions in oil in a sauté pan over medium heat, covered, stirring occasionally until very soft, 10–15 minutes.
Add peppers, broth, port, and vinegar; simmer, uncovered, until liquid nearly evaporates, 10–15 minutes. Stir in scallions; season with salt.
