To prep this dish ahead, blanch the asparagus, then shock it in cold water. Refrigerate it until you’re ready to sauté and serve.
Instructions
Blanch asparagus in a large pot of boiling salted water until al dente, about 2 minutes. Drain asparagus and immediately plunge into a bowl of ice water to stop the cooking, then drain again.
Sauté garlic in oil in a sauté pan over medium-high heat until fragrant, 1 minute. Add asparagus and cook to heat through, 3 minutes. Stir in almonds and season with salt and pepper.
