For roasting, apples with firm flesh are the way to go. They retain crispness for a little crunch. Try varieties like Pink Lady, Braeburn, Granny Smith, and Mutsu or Crispin.
Instructions
Preheat oven to 450°.
Cook bacon in a large skillet until crisp. Transfer bacon to a paper-towel-lined plate; reserve the drippings and the skillet to make Pork Chops & Apple Sauce.
Toss cauliflower, leeks, apple, and thyme with 2 Tbsp. drippings; season with salt and pepper. Spread vegetables evenly on a large baking sheet.
Roast vegetables on lower rack in oven until cauliflower is golden brown and apples are tender, 20–25minutes. Toss vegetables with cooked bacon and serve with pork chops.
