Instructions
Sauté bacon in a skillet until crisp; drain on paper towels.
Cook potatoes in a pot of boiling water, covered, until tender, 12–15minutes; drain. Return potatoes to the pot; stir over medium heat to remove excess moisture, about 1 minute. Remove pot from heat; add milk, yogurt, and salt. Mash potatoes until smooth.
Stir in 2 Tbsp. Cheddar and bacon. Garnish potatoes with remaining 1 Tbsp. Cheddar and scallions.
