Cheesy Cabbage Gratin

Preheat oven to 375°.
For the cabbage, place cabbage on a baking sheet and drizzle with oil; season with salt and pepper.
Roast cabbage until tender and edges are golden, 40–45 minutes.
Meanwhile, cook bacon in a skillet over medium heat until crisp. Using a slotted spoon, transfer bacon to a paper-towellined plate. Add leeks to skillet; cook over medium heat until softened. Stir in garlic and flour; cook 1 minute.
Add cream and broth; bring to a simmer and cook until beginning to thicken, 6–8 minutes. Off heat, stir in bacon, Gruyère, Parmesan, lemon juice, and thyme.
For the topping, heat oil in a skillet over medium; stir in bread crumbs and cook until beginning to brown. Transfer bread crumbs to a bowl; let cool 5 minutes.
Stir in Gruyère, Parmesan, and zest; season with salt and pepper.
Coat a shallow 3-qt. baking dish with nonstick spray. Arrange cabbage in dish cut sides down. Pour sauce over cabbage; sprinkle on topping. Bake gratin on middle rack, uncovered, until bubbly and crumbs are brown, 20–25 minutes.
