For the sauce, boil water and ham for the ham broth in a saucepan until water is reduced to ½ cup, about ⏰ 15 minutes.

Melt butter in a saucepan over medium heat. Whisk in flour until smooth. Gradually add milk, whisking constantly, and cook until thick. Stir in ham broth, reduce heat to low, and simmer sauce ⏰ 10 minutes; season with pepper.

For the greens, heat oil in a pot over medium-high. Add onions and garlic; sauté until softened, ⏰ 3 minutes.

Add collard greens, a handful at a time, tossing until wilted; cook until tender, ⏰ 1520 minutes. Add mustard greens, a handful at a time, tossing until wilted; cook until tender, ⏰ 510 minutes.

Transfer greens to a bowl; stir in sauce, season with salt, and serve with Tabasco.
