Instructions
Separate chard stems and leaves.
Thinly slice stems and chop leaves
into 1-inch pieces.
Cook bacon in a sauté pan until crisp;
transfer to a paper towel-lined plate,
reserving drippings in pan.
Cook chard stems, onion, and garlic
in drippings over medium heat until
softened, 4–5minutes. Stir in chard
leaves; cook, stirring often, until
beginning to wilt, then stir in bacon
and remove from heat.
Melt butter in a saucepan over medium
heat; stir in flour and cook 1–2minutes.
Slowly whisk in half-and-half; bring to a
boil. Reduce heat to low, whisk in
Parmesan and mozzarella; simmer sauce,
whisking until smooth and thickened,
2–4minutes. Whisk lemon juice into
sauce; season with salt and pepper. Stir
sauce into chard mixture.
