Instructions
Combine neufchatel, scallions,
mint, cilantro, and lime juice.
Lay wonton wrappers on a flat
surface. Place 1½ tsp. neufchatel
filling in center of each wrapper.
Brush water around edges
of wrappers.
Shape wrappers using a triangle
fold by lightly pinching the edges
of dough to divide circumference
of circle into thirds. Press the
open edges together to seal.
Heat 1 tsp. oil in a nonstick skillet
over high. Add half the rangoons;
cook 1 minute. Reduce heat to low,
add 1 Tbsp. water to skillet, cover,
and cook rangoons 3 minutes more.
Repeat cooking process with
remaining 1 tsp. oil and remaining
rangoons.
