Crispy Mashed Sweet Potatoes

Preheat oven to 400°. Spray a 10-inch cast-iron skillet with cooking spray.
Bring sweet potatoes, 2 teaspoons salt, and water to cover by 2 inches to a boil in a large Dutch oven over medium-high heat. Cook until tender, 15 to 20 minutes; drain well. Add buttermilk, ¼ cup butter, 2 teaspoons salt, 2 teaspoons rosemary, 1 teaspoon pepper, and garlic powder. Mash until smooth; fold in ⅓ cup Gruyère. Spread in prepared pan.
Stir together bread crumbs, Asiago, remaining ⅓ cup Gruyère, remaining ½ teaspoon salt, remaining 1 teaspoon rosemary, and remaining ¼ teaspoon pepper in a small bowl. Stir in melted butter. Sprinkle mixture over potatoes.
Bake until golden brown, about 30 minutes. Garnish with rosemary, if desired.
