Instructions
For the slaw, toss cucumber with salt in a colander set over a bowl; let drain 15 minutes. Arrange cucumber on paper towels and pat dry.
For the dressing, whisk together mayonnaise, zest, lime juice, vinegar, and sugar; season with pepper.
Add cucumber, jicama, coconut, and scallion greens; toss to coat and top with macadamia nuts. Serve slaw immediately.
