Steaming the cauliflower is key to this recipe. It not only softens the cauliflower
flavor, it also helps it absorb the curry flavor so it becomes more pronounced.
Keep salad in the refrigerator (below
40°F) until the very last moment.
The longer a salad sits out at room
temperature, the more time bacteria
has to grow. And make sure to
never leave anything out longer than
2 hours (or 1 hour if the temperature
is over 90°F). If serving the salad
outside, place your salad on top of
another bowl filled with ice to help
keep it chilled.
Instructions
Place cauliflower florets in a
microwave-safe bowl with about
½-inch of water.
Cover bowl tightly with plastic
wrap; microwave on high until
florets are just tender, 3–5minutes.
Drain cauliflower; let cool slightly.
Add chickpeas, apples, raisins,
and cilantro to cauliflower.
Whisk together mayonnaise,
lemon juice, onion, curry powder,
garlic salt, cumin, and chili powder;
stir into cauliflower mixture until
combined. Top salad with pine nuts
before serving; serve immediately
or chill.
