Instructions
Toss together cabbage, onion,
carrot, jalapeño, oregano, and
pepper flakes.
Heat vinegar, sugar, and salt in
saucepan over medium for the
brine, stirring, until sugar and
salt dissolve.
Pour brine over cabbage mixture,
tossing to combine; cover and
refrigerate overnight, or at least
1 hour. Before serving, drain
Curtido and stir in cilantro.
