Gherkins, small pickled fruits, are just the right size for garnishing the eggs.
Instructions
Hardcook eggs by placing them in a medium saucepan covered with cold water. Bring water to a boil over high heat. Cover pan, remove from heat, and let eggs stand 12 minutes. Run cold water in the pan to cool eggs, then peel and halve lengthwise. Scoop yolks into a bowl; set whites aside.
Mash yolks with salad dressing, parsley, pickle juice, Dijon, vinegar, cayenne, and dry mustard until smooth; season with salt.
Pipe or spoon yolk mixture into the white halves.
Top eggs with gherkins before serving. Serve immediately or chill.
