How to Make Fried Parsley
To make fried parsley,
add a few parsley leaves
to Dutch oven, and fry for
30 seconds. Remove using
a slotted spoon, and let
drain on paper towels.
Instructions
For Turnips: Fill a large Dutch oven
halfway full with oil, and heat over
medium heat until a deep-fry
thermometer registers 325°.
Toss together turnips and cornstarch
in a large bowl. Working in batches,
fry turnips until softened but not
browned, 2 to 3 minutes. Remove
turnips using a slotted spoon,
and let drain on paper towels.
Increase heat to medium-high,
and heat oil until a deep-fry
thermometer registers 360°.
Working in batches, fry turnips again
until golden brown, 2 to 3 minutes
more. Remove turnips using a
slotted spoon, and let drain on
paper towels. Sprinkle with salt.
For Smoky Dipping Sauce:
Combine mayonnaise, paprika,
and lemon zest in a large bowl.
Serve with fried turnips. Garnish
with fried parsley, if desired.
