Garlic-Rubbed Fried Bread

Some things never change — the pairing of Portuguese Fisherman’s Stew with crusty, lightly fried bread is one of them. More than just an add-on, it’s a classic pairing for good reason — it complements the flavor and texture of the stew. Not to mention it’s a great vehicle for soaking up the stew’s fishy broth and an easy last-minute recipe.

Test Kitchen Tip

Because it doesn’t take long for the bread to fry to the desired golden brown color, watch it closely.

Instructions

Heat ¼ cup oil with 2 smashed cloves garlic in a 12-inch nonstick skillet over medium-high.

Fry 6 slices of bread in garlic oil until golden on each side, about 2 minutes per side.

Transfer bread to a paper-towel-lined plate. While still warm, rub each side of fried bread with halved garlic clove. Repeat heating, frying, and rubbing with remaining oil, garlic, and bread.
