Instructions

Whisk together water, ginger, and sugar in a large saucepan over high heat; bring to a boil.

Add carrots and return to a boil. Simmer, flipping occasionally, until carrots are tender but not mushy and liquid has nearly evaporated, 1015 minutes.

Stir in butter until melted and season with salt and pepper.
