Instructions
Boil potatoes in a large pot of salted water until fork-tender, 10–15minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds.
Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
