If you can’t find fresh fava beans,
substitute frozen and thawed
lima beans or edamame.
Instructions
String fava beans and remove outer shells. Blanch beans 30 seconds to 1 minute, then shock quickly in ice water. Peel off remaining thin shell; dry.
Combine fava beans, watermelon, cucumber, feta, parsley, mint, and zest in a large bowl.
Whisk together lemon juice and oil; season with salt and pepper. Drizzle vinaigrette over bean mixture and toss to coat.
