The woody stems of green beans can be tough to eat. Remove them by snapping them off or slicing them with a paring knife.
Instructions
Heat 1 Tbsp. oil in a skillet over medium-high. Add green beans and cook until starting to brown, 3 minutes. Add water, cover skillet, and reduce heat to medium; cook beans 3 minutes. Remove lid and push beans off to one side of skillet.
Sauté shallots, garlic, and pepper flakes in remaining 1 Tbsp. oil in cleared half of skillet, 1 minute. Stir in tomatoes and cook until they start to soften and release some liquid, 2 minutes.
Off heat, stir in vinegar, then season beans and tomatoes with salt and black pepper.
