Purchase firm, crisp, and evenly colored green beans. Snap one in half — it’s fresh if moisture forms at the break.
Instructions
Blanch beans in a pot of boiling salted water until tender, about 4 minutes; drain.
Cook bacon in a skillet over medium heat until crisp. Transfer bacon to a paper-towel-lined plate and drain all but 2 Tbsp. drippings from skillet.
Add mushrooms and shallots to skillet and cook over medium heat until mushrooms are browned and shallots are softened, 8–10minutes.
Deglaze skillet with vinegar, scraping up any browned bits. Reduce vinegar until evaporated, then add reserved beans to skillet and toss to combine. Top beans with bacon and season with salt and pepper.
