Bread and tomatoes are the base of this dish, but you can add any of your favorite vegetables to the salad.
Instructions
Preheat grill to medium-high. Brush grill grate with oil.
Whisk oil, vinegar, and Dijon together for the vinaigrette. Season with salt and pepper; set aside.
Toss vegetables, mozzarella, olives, and basil together in a bowl.
Grill baguette, cut side down, until golden, 2–3minutes, then rub with the cut side of the tomato half. Slice bread into cubes, add to vegetables, and toss with vinaigrette.
