Preheat grill to medium-high. Brush grill grate with oil.
Mince parsley, garlic, scallions, zest, and salt in a mini food processor, scraping down sides of bowl as needed. Add oil and process until combined; season with pepper.
Grill bread slices, uncovered, until toasted and grill marks appear, 1–2minutes per side. Transfer bread to a serving platter, and spread parsley mixture over top.
