Instructions
Preheat grill to medium-high. Brush grill grate with oil.
Grill potatoes, corn, and shallots, covered, turning often to prevent charring. Cook until grill marks appear and potatoes are tender, 10–15 minutes.
Transfer vegetables to a bowl and toss with butter, parsley, salt, and pepper.
