Instructions
Blanch haricots verts in a pot of boiling salted water until crisp-tender, 4–5minutes. Transfer haricots verts to a bowl of ice water to stop cooking; drain.
Heat oil in a sauté pan over medium-high. Add apricots and garlic; cook 1 minute. Add haricots verts and cook to heat through, 2–3minutes. Stir in zest and lemon juice; season with salt and pepper flakes. Garnish haricots verts with goat cheese.
