Instructions

For the vinaigrette, blend Parmesan, oil, zest, lemon juice, pepper, and salt in a food processor until smooth.

For the salad, toss romaine, tomatoes, cucumbers, onion, and olives in a bowl with vinaigrette just before serving. Top salad with pine nuts.
