Instructions
Whisk together oil and lemon juice for the vinaigrette; season with salt and pepper.
Cook pancetta in a skillet over medium heat until crisp. Transfer pancetta to a paper-towellined plate; drain all but 1 Tbsp. drippings. Add shallots to skillet and cook 1 minute; add garlic and cook 1 minute. Add vinaigrette to skillet to heat through.
Toss kale and pancetta in a bowl with warm vinaigrette.
