Although the recipe calls for fresh corn, in a pinch you can use frozen sweet corn and char it in a skillet (preferably cast iron). Converted rice retains more nutrients, contains less starch, and is less sticky than most white rice.

Instructions
Preheat grill to medium-high. Brush grill grate with oil.
Cook rice with salt and cayenne according to package directions.
Grill corn, covered, turning occasionally, until charred, 8–10minutes. When cool enough to handle, cut kernels off cob.
Stir scallion greens, zest, and corn into rice.
