Mashed Potatoes & Peas

Mashed potatoes are a traditional side dish for a classic pot roast, but add sweet peas for a little extra veg and color. Russet potatoes are excellent in this side dish, but any potato works in a pinch.

Instructions

Cook potatoes in a pot of boiling salted water until tender, 1215 minutes; drain. Return potatoes to the pot; cook, stirring, over low heat for 1 minute to remove moisture. Mash potatoes until smooth.

Stir in milk, butter, and peas and season with salt and pepper; serve immediately topped with chives.

I've never been a fan of mashed potatoes. They always seem bland. I do love the "green" element of this recipe with the addition of peas and chives.
