Instructions
Cook potatoes and onion in a pot of boiling salted water until potatoes are fork-tender, 12–15minutes. Drain potatoes and onion; return to the pot over medium heat and cook, stirring often, to remove excess moisture, 1 minute.
Stir in half-and-half and butter, then beat mixture with a hand mixer on low speed until smooth. Stir in chives and season potatoes with salt and pepper.
