Roast these potatoes on their own, or alongside the Marinated Chicken. The chicken will help flavor the potatoes!
Instructions
Preheat oven to 450°.
Toss potatoes in a large bowl with oil, salt, and pepper. Heat a large nonstick ovenproof skillet over medium-high, then add potatoes and residual oil.
Sauté potatoes until they start to brown, about 5 minutes. Transfer the skillet to the lowest rack of the oven; roast potatoes 20 minutes. Stir potatoes, then roast until browned and crisp, about 10 minutes longer.
