Sautéed Radishes with orange-tarragon butter & bacon

Radishes are a member of the mustard family, so their flavor can range from mild to peppery. Sautéing them lessens their assertiveness, and marrying them with bacon and an orange-tarragon butter sauce makes for a colorful and delicious spring side dish.

Instructions

Cook bacon in a skillet until crisp; transfer to a paper-towel-lined plate.

Heat butter, tarragon, zest, salt, and pepper in same skillet over medium-high until butter melts. Add radishes and shallots; sauté until radishes begin to brown, stirring occasionally, about 6 minutes.

Stir in orange juice; heat to a boil until radishes are just tender and sauce slightly thickens, about 2 minutes. Stir in radish greens, bacon, and vinegar; cook until greens just begin to wilt, then season with salt and pepper. Serve radishes warm.
