Use a mandoline to quickly and uniformly cut the sweet potatoes into super-thin slices.

Instructions

Preheat oven to 400°. Butter inside of a 4-quart baking dish.

Toss together sweet potatoes, sage, garlic, salt, and pepper. Shingle sweet potatoes in prepared dish; cover with foil.

Bake casserole, covered, 45 minutes. (The recipe can be made to this point and refrigerated.) Remove foil, add cream, and bake, uncovered, until cream thickens and sweet potatoes are fork-tender, about 25 minutes more.
