Boil the potatoes a day ahead and keep them refrigerated. Flatten and roast the potatoes right before you want to serve them.
Instructions
Cook potatoes in a pot of boiling salted water until tender, about 15 minutes. Drain potatoes; chill until ready to roast.
Preheat oven to 450°. Coat a baking sheet with 3 Tbsp. oil and heat in oven, 5 minutes.
Lightly flatten potatoes with the palm of your hand, then coat with oil; season with salt and pepper.
Roast potatoes on prepared baking sheet, 15–20minutes. Flip potatoes and roast until brown and crispy, 15–20minutes more.
Top potatoes with scallions.
