Make-Ahead Tip
If you make your potatoes ahead,
and they seem a little stiff or dry
when reheating, add some milk.
Instructions
Cook potatoes in a pot of boiling
salted water until fork-tender,
10–12minutes. Drain potatoes
and return to pot. Cook potatoes
over medium-low heat, stirring
to remove excess moisture,
1–2minutes.
Meanwhile, sauté shallots in
butter in a skillet over medium
heat until softened, 3 minutes.
Add milk, sour cream, and shallot
mixture to pot. Crush potatoes
with a potato masher to desired
consistency; stir in parsley and
season with salt and pepper.
