Sourdough-Orange Dressing with pecans & rosemary
Sourdough bread dressing starts out rustic, having been based on a recipe found in a tattered cookbook from the late 1940s. Toasting the bread cubes is a neat trick to dry the cubes while adding flavor. Mandarin oranges echo the citrus brine of the Brined & Smoked Citrus Turkey Breast; fresh are ideal if they’re sweet, but jarred mandarins will do in a pinch.

Instructions
Preheat oven to 375°. Coat a
1½ qt. baking dish with nonstick
spray.
Melt butter in skillet over medium-high
heat. Cook celery and onions
in butter until onions soften,
3 minutes.
Stir in bread, broth, orange
segments, pecans, rosemary, zest,
salt, and pepper until combined;
transfer to prepared dish.
Bake dressing, uncovered, until
crusty and browned, 30–40
minutes; cool 10 minutes before
serving.
