Spinach & Kale Salad with Apples and Cherries

Instructions
Massage kale with 1 Tbsp. oil and 1 tsp. salt in a large bowl until kale slightly softens.
Whisk together remaining 3 Tbsp. oil, lemon juice, and sugar for the vinaigrette; season with salt and pepper.
Pulse walnuts and Parmesan in a mini food processor until fine.
Add spinach, apple, and cherries to kale; toss with vinaigrette. Garnish servings with walnut topping.
