Cook bacon in a 12-inch cast-iron skillet
over medium heat until crisp, about
12 minutes. Remove bacon using a
slotted spoon, and let drain on paper
towels, reserving 1 tablespoon
drippings in skillet.
Increase heat to medium-high. Add
ginger and garlic; cook until fragrant,
about 30 seconds. Add chard in batches,
stirring until wilted after each addition;
cook for 3 minutes. Stir in green onion,
honey, vinegar, salt, and red pepper. Top
with cooked bacon just before serving.
