Sweet Golden Potatoes Gratin
Sweet Golden Potatoes Gratin are a favorite Thanksgiving Day side dish. They can be assembled six hours before dinner. If made ahead, let gratin stand at room temp 30 minutes before baking.

Preheat oven to 400°. Coat a 9×13-inch baking dish with nonstick spray.
Place potato slices into a bowl of cold water.
Whisk together cream and garlic in a saucepan over medium-high heat until heated through, 4–5 minutes.
Drain potatoes, pat dry well with paper towels. Combine rosemary, sage, salt, and pepper.
Toss potatoes with rosemary mixture; transfer half to prepared dish, top with half the Gruyère, and pour in cream mixture. Layer in remaining potatoes and Gruyère, then top with Parmesan. (Gratin can be made up to 6 hours ahead to this point.)
Cover gratin with foil; bake 30 minutes, then uncover and bake until top is golden and potatoes are fork-tender, 25 minutes more. Let gratin stand 10–15 minutes before serving.
