Tomato Rice with Parsley
It’s not hoppin’ John without rice. But this side dish is just as good on its own, as it is smothered with the brothy peas.
Instructions
Heat oil in a pot over medium. Stir in rice and garlic and cook until fragrant, 30 seconds. Stir in water, tomatoes, and salt; bring to a boil.
Cover pot, reduce heat to low, and cook rice until tender, 20 minutes; remove from heat and let stand 5 minutes.
Stir in parsley and season rice with pepper.
