You can reheat the sweet potatoes in a microwave instead of on the grill.
Instructions
Microwave sweet potatoes 5 minutes, rotate, and microwave until fork-tender, about 5 minutes more. When cool enough to handle, slice in half horizontally, scoop flesh into a bowl, and mash.
Preheat grill to medium high. Brush grill grate with oil.
Melt butter in a saucepan over medium heat. Stir in coconut milk and brown sugar; cook until sugar dissolves, 2–3minutes. Stir mixture into mashed sweet potatoes; add salt and nutmeg. Spoon mixture into shells. Grill, covered, to heat through, 3 minutes. Garnish sweet potatoes with toasted coconut.
