Ultimate Roasted Asparagus with Peas and Tarragon
Simple Roasted Asparagus is taken to the next level by adding fresh peas and tarragon. Crispy prosciutto rounds out this fantastic dish by giving it just the right amount of texture and saltiness.

Wash and trim
asparagus. Slice
shallots. Wash
green peas.
Refrigerate until
ready to cook.
Instructions
Preheat oven to 425°.
Combine asparagus, 1 tablespoon oil, ½ teaspoon salt, and ¼ teaspoon pepper in a large bowl, tossing to coat. Spread asparagus in a single layer on a baking sheet.
Roast for 12 minutes, stirring halfway through. Remove from oven. Arrange asparagus on a platter; keep warm.
Cook prosciutto over medium-high heat in a medium skillet until crisp. Remove from skillet, and let drain
on paper towels.
Heat remaining tablespoon oil
over medium heat in same skillet. Add peas and shallot; sauté for
2 minutes. Add vinegar, mustard, remaining ¼ teaspoon salt, and remaining ¼ teaspoon pepper;
cook for 30 seconds. Spoon pea mixture over asparagus. Sprinkle with prosciutto and tarragon.
