Five-Minute Morning Prep

Wash and trim asparagus. Slice shallots. Wash green peas. Refrigerate until ready to cook.

Preheat oven to 425°.

Combine asparagus, 1 tablespoon oil, ½ teaspoon salt, and ¼ teaspoon pepper in a large bowl, tossing to coat. Spread asparagus in a single layer on a baking sheet.

Roast for 12 minutes, stirring halfway through. Remove from oven. Arrange asparagus on a platter; keep warm.

Cook prosciutto over medium-high heat in a medium skillet until crisp. Remove from skillet, and let drain on paper towels.

Heat remaining tablespoon oil over medium heat in same skillet. Add peas and shallot; sauté for 2 minutes. Add vinegar, mustard, remaining ¼ teaspoon salt, and remaining ¼ teaspoon pepper; cook for 30 seconds. Spoon pea mixture over asparagus. Sprinkle with prosciutto and tarragon.
