Watercress & Asparagus Salad with Smoked Salmon
This quick and easy salad with watercress, asparagus, and smoked salmon can be served as a side salad or full entrée salad for two.

Instructions
Whisk together egg yolk, lemon juice, Dijon, dill, vinegar, and sugar for the dressing; slowly drizzle in oil until incorporated.
Blanch asparagus in a pan of boiling salted water until crisp-tender, about 3 minutes. Drain asparagus and pat dry.
Divide salmon, asparagus, croutons, and watercress between two plates; season with pepper. Drizzle dressing over salads.
