Start the rice first since it takes longer to cook than the fish.

Instructions

Heat oil in a saucepan over medium-high. Add onion, carrot, and garlic; cook until softened, 3 minutes. Stir in rice blend to coat with oil and toast 1 minute.

Deglaze pan with wine and cook until absorbed. Stir in broth and bring to a boil. Cover pan, reduce heat to low, and cook rice until tender, 2530 minutes.

Stir in almonds, lemon juice, and thyme, and season rice with salt and pepper.
