HOW TO MAKE THE ULTIMATE DOUBLE-LAYER CHOCOLATE CAKE
Ingredients
Every great dessert begins with gathering the best ingredients, creating a culinary masterpiece when combined and cooked. Here’s what you’ll need to make a fudgy and delicious chocolate cake with chocolate buttercream frosting that’s sweet but not overbearing and dry.
For the cake
- 2 cups all-purpose flour
- ¾ cup cocoa powder
- 2 cups granulated sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ cup vegetable oil (canola or coconut oil also works)
- 2 teaspoons espresso powder (optional but
- recommended to enhance the cake’s flavor)
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 cup of fresh hot coffee (this boosts the chocolate flavor)
For the frosting
- 1 ½ cups (or about 2 ½ sticks) of unsalted butter
- ¾ cup cocoa powder
- 4 cups confectioners’ sugar
- 4 tablespoons heavy cream
- ½ teaspoon salt
- 1 teaspoon pure vanilla extract
Be sure to also have two 8-inch round cake pans to bake your cakes in!
Instructions
Making the cake
- Start by preheating your oven to 350 degrees Fahrenheit. Grease and line your pans with parchment paper. This aids in the easy removal of the cakes once they are finished baking.
- Next, gather your ingredients to start preparing your cake. In a generously sized bowl, whisk together your dry ingredients (flour, cocoa powder, sugar, baking soda, baking powder, salt, and espresso powder). After this is complete, set the bowl aside.
- In a similar-sized bowl, mix the oil, eggs, and vanilla extract. An electric mixer can be used to do this. Next, add in the buttermilk and whisk thoroughly.
- Add the wet ingredients to the dry ingredients and stir until they are completely combined without lumps.
- Next, carefully whisk in the hot coffee to finish off your batter.
- Grab your cake pans and pour equal amounts of batter into each pan. Put the cakes in the oven and bake them for 35-40 minutes. You’ll know that they are finished when you can stick a toothpick in the cake and it comes out clean. Wait at least 30 minutes for them to cool before removing them from the pans.
Making the frosting
- In a large bowl, whip up your butter and beat it until it has a fluffy texture.
- Using a mixer on the lowest setting, add about 2 ½ cups of confectioners’ sugar and beat the two together. Next, add in your salt and cocoa powder and mix on low speed as well.
- Lastly, beat in your heavy cream 2 tablespoons at a time as you gradually add in the rest of your confectioners’ sugar until your frosting reaches your desired thickness.
Putting the cake together
- Double-check that the cakes have completely cooled off before assembly.
- If while baking your cakes formed a dome at the top, slice off a slim layer with a serrated knife from the top of it to create a flat surface.
- Place one of the cakes with the top side facing down on the surface you plan on using to serve it. Take your frosting and begin to frost it to your desired thickness. A good amount of frosting for each layer is about a quarter of an inch thick.
- Next, place the last cake layer top-side down on top of the first one. Lightly frost the top and sides. Put the cake in the fridge for about one hour to set. Remove the cake from the fridge and finish frosting the sides and top of the cake to your heart’s desire. Once you are satisfied, cut a slice and dig in!
TAKE YOUR CAKE TO THE NEXT LEVEL
If you want to add some extra oomph to your chocolate cake, here are some sweet tips that may serve you well:
- Decorate your cake with a chocolate fan for style! This not only makes your cake look more elegant but also gives it a pretty touch. To make this, spread out a small layer of melted chocolate on a marble surface. Using a light hand, run a dough cutter down the length of the chocolate. When molding the chocolate into a fan shape, use your other hand to guide it into the folds.
- Dress up your cake with fruits, cookies, chocolate candies like Twix or M&Ms, or any other toppings that you like to add some more flavor!
With its rich flavors, this cake is perfect for chocolate lovers! Try out this great recipe that will be sure to satisfy your sweet tooth.
