Veggie Pizza with garlic hummus
Hummus on pizza? You bet! The thick Middle Eastern sauce made with mashed chickpeas, lemon juice, tahini, and garlic totally transforms the notion of what pizza tastes like. If you’ve had hummus on pita bread — one of the more traditional ways — that flavor is similar to what you should expect here. Aside from the sauce swap, the rest of the pizza will seem familiar. Toppings are Mediterranean but common: spinach, bell pepper, tomatoes, and cheese.
You can just as easily form and pile the toppings on two small pizza crusts as you can one family-sized crust. Feel free to save an unbaked pizza for later by freezing it directly on the peel. Once it’s frozen solid, just wrap it in plastic and return it to the freezer
