Better Bacon-Wrapped Appetizers
Ensure perfectly crisp and tender bacon-wrapped appetizers with this easy-to do and make-ahead tip.
When making bacon wrapped shrimp or scallop appetizers, it's all to common to end up with uncooked bacon—not very appetizing. To solve that, precook the bacon just until done (but not super crispy), then drain and chill it overnight. The next day, wrap the cooked bacon around the seafood, pinning it in place with a toothpick, then broil or bake until the shellfish is done. The bacon returns to its crispy cooked state, and the entire appetizer is much more enjoyable.
