A vegetable peeler is the perfect tool for removing the seeds from a jalapeño or serrano. Slice off the top of the chile, then work the peeler around the inside — out come the core and seeds, all at once. It's quick and mess-free, plus it keeps the seeds off your fingers — and out of your eyes.
