Crispy Soup Topper: Easy Shoestring Fries
For cheeseburger soup, a cracker topping just won't do. Make these easy fried shoestring fries instead.

Heat ½-inch peanut oil in a skillet to 350°. Peel 1 12-oz. russet potato and cut into thin strips. Fry potato strips until golden; transfer to a paper-towel-lined plate and sprinkle with kosher salt. Use fries as a soup topper, or serve as a side for your favorite burger or sandwich.
